In the world of luxury these exclusive chickens of Bresse have the same reputation as sturgeon caviar or the white truffle of Alba. The charm of the local chickens lies in their appearance, a gift of Mother Nature: snow white feathers, crimson crest and interesting blue-purple legs; i.e. French national colors. The Bresse region is relatively small and boats unique geological properties. The local soil contains only a tiny amount of calcium, which makes the bones of the domestic fowl more tender and lighter (In the language of marketing you get more meat than bones for your money.). Moreover, the soil is rather acidic, which contributes to the snow-white hue of the feathers and to the bluish hint of the legs. For the first three weeks of their life chickens remain on straw bedding in spacious heated hencoops and are fed regular cereal mixes. Afterwards, they are let out into free, grass run. The eco-system of this location, along with the chemical composition of the soil and worms and larvae enhance the excellent taste of these chickens. All of these qualities resulted to the award of AOC, a trademark of origin. The local fowl received this award already in 1957. Ever since its living environment has to be strictly protected. Every chicken is provided with at least ten square meters in the run and enjoys this space for nine weeks. Besides natural foods the chickens are fed corn, cereals and a bit of milk. The last week of their life is restrained to wooden cage where the chickens become fatter. These chickens belong to organic foods. The Royal Golf hotel restaurant has just ranked among a few select restaurants that import them into the Czech Republic.
